Fabulous Russian salad for Russian Christmas (today Jan 7th)
The salad is called 'shuba' ie overcoat (for the fish). This is my veggie adaptation
4 beetroots
3 largish potatoes
4 large carrots
small red onion
bunch dill
several dill pickles
can of peas
250 grammes cheese (otherwise chopped prawns or smoked fish eg herring)
jar of mayo
salt
chopped garlic if liked
vary the quantities according to taste
Cut beets in half or quarters and boil for c. 30 mins. Peel and cube. Boil potatoess and carrots and cube.
Make layers in a bowl, covering with mayo every 2 layers. I put beets, potatoes, carrots, peas, grated cheese, onion, pickles (chopped), dill, carrots, potatoes, beet. Mayo on top. If you have a glass bowl the colours look pretty in their layers.
